Make a homemade version of the popular fast-food Mexican Pizza using seasoned beef, refried beans, and crispy tortillas.

Ingredients

Scale
  • 12 small flour tortillas
  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1 cup water
  • 1 can (16 ounces) refried beans, warmed
  • 1 cup enchilada sauce
  • 2 cups shredded Mexican cheese blend
  • 1 cup diced tomatoes
  • 1/2 cup sliced black olives
  • 1/4 cup sliced green onions

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Fry tortillas in batches until golden brown and crispy, about 1 to 2 minutes per side. Drain on paper towels.
  2. Brown the ground beef in the skillet, breaking it apart as it cooks. Drain off excess fat.
  3. Stir in the taco seasoning and water according to package directions. Simmer until the sauce thickens slightly.
  4. To assemble the first layer, place one crispy tortilla on a baking sheet. Spread half of the warmed refried beans evenly over the tortilla. Top with half of the seasoned ground beef.
  5. Place a second crispy tortilla on top of the beef layer. Pour half of the enchilada sauce over the top tortilla, spreading it to cover the surface.
  6. Sprinkle half of the shredded cheese over the enchilada sauce. Bake at 400 degrees Fahrenheit for 8 to 10 minutes, or until the cheese melts and bubbles.
  7. Repeat steps 4 through 6 to make a second pizza.
  8. Top both finished pizzas with diced tomatoes, sliced black olives, and sliced green onions. Slice into wedges and serve immediately.

Notes

  • For extra crispiness, you can bake the tortillas for 5 minutes before adding toppings.
  • Use your favorite brand of enchilada sauce for the best flavor.
  • If you prefer, substitute ground turkey for the ground beef.
