A simple recipe for preparing moist salmon fillets coated in a savory-sweet miso glaze, finished with fresh scallions.

Ingredients

Scale
  • 4 (6 ounce) salmon fillets, skin on or off
  • 2 tablespoons white miso paste
  • 2 tablespoons mirin
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 2 scallions, thinly sliced for garnish

Instructions

  1. Preheat your oven broiler and position a rack about 6 inches from the heat source. Line a baking sheet with foil or parchment paper.
  2. In a small bowl, whisk together the miso paste, mirin, soy sauce, brown sugar, sesame oil, and grated ginger until smooth. This is your miso glaze.
  3. Pat the salmon fillets dry with paper towels. Place the fillets on the prepared baking sheet.
  4. Brush about half of the miso glaze evenly over the top surface of each salmon fillet.
  5. Place the baking sheet under the broiler for 4 to 6 minutes. Watch closely to prevent burning.
  6. Remove the pan from the oven. Brush the remaining glaze over the salmon.
  7. Return the salmon to the broiler for another 3 to 5 minutes, or until the glaze is caramelized and the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145 degrees Fahrenheit.
  8. Remove from the oven and let rest for 2 minutes. Garnish generously with the sliced scallions before serving.

Notes

  • For best results, use thick-cut salmon portions.
  • If you prefer baking over broiling, bake at 400 degrees Fahrenheit for 12 to 15 minutes, glazing halfway through cooking.
  • Serve this salmon with steamed rice and blanched asparagus or steamed bok choy for a complete meal.
