Learn how to make light and fluffy oven baked egg bites in a muffin tin. These high protein breakfast cups are perfect for freezer friendly breakfast meal prep.

Ingredients

Scale
  • 12 large eggs
  • 1/4 cup milk or unsweetened almond milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked, chopped protein (like ham, bacon, or sausage)
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup chopped vegetables (spinach, bell peppers, or mushrooms)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a standard 12-cup muffin tin or use silicone muffin pan liners.
  2. In a large bowl, whisk the eggs, milk, salt, and pepper together until they are light and frothy. This helps create a fluffy interior.
  3. Divide the chopped protein, cheese, and vegetables evenly among the prepared muffin cups.
  4. Carefully pour the egg mixture over the fillings in each cup, filling them about three-quarters full. Do not overfill.
  5. For the best texture, place the muffin tin inside a larger baking pan. Pour hot water into the larger pan until it reaches halfway up the sides of the muffin tin. This creates a water bath.
  6. Bake for 18 to 22 minutes, or until the egg bites are set and a toothpick inserted near the center comes out clean.
  7. Remove the muffin tin from the water bath and let the egg muffin cups cool in the tin for 5 minutes before removing them.
  8. For storage, let them cool completely. Store in an airtight container in the refrigerator for up to 4 days or freeze for longer storage.

Notes

  • To reheat frozen egg bites, microwave them for 60 to 90 seconds until warmed through.
  • If you skip the water bath, your egg bites may become slightly more rubbery, but they will still be tasty!
  • Feel free to adjust the mix-ins to make keto egg bites by using low-carb vegetables and omitting any starchy additions.
  • This recipe makes a great breakfast for kids because they are easy to hold and eat.
