- 1 cup extra virgin olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon red pepper flakes
- 1/4 cup grated Parmesan cheese (optional)
- 1/4 teaspoon black pepper
- 1/2 teaspoon coarse salt
- Place the minced garlic, dried oregano, dried basil, dried rosemary, and red pepper flakes into a shallow serving dish.
- Pour the extra virgin olive oil directly over the herbs and garlic mixture.
- Stir the ingredients together gently to combine them.
- Allow the mixture to sit at room temperature for at least 5 minutes so the flavors infuse the oil.
- Just before serving, stir in the salt and black pepper.
- If you are using Parmesan cheese, sprinkle it over the top of the oil mixture.
- Serve immediately with crusty bread or focaccia for dipping.
Notes
- For a tangier flavor, add 2 tablespoons of balsamic vinegar to a separate small bowl to serve alongside the oil.
- You can substitute fresh herbs for dried, using 1 tablespoon each of fresh chopped oregano, basil, and rosemary.
- If you want a thicker dip, let the mixture sit for 30 minutes or longer before serving.
