Ingredients

Scale
  • 1 pound ground chicken or turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup finely chopped onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (13.5 ounce) can full-fat coconut milk
  • 1/2 cup chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon brown sugar
  • 1/4 cup chopped fresh cilantro, for garnish

Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, milk, egg, chopped onion, salt, and pepper. Mix gently until just combined.
  2. Roll the mixture into 1-inch meatballs.
  3. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  4. Add meatballs to the skillet and brown them on all sides. Remove meatballs from the skillet and set aside.
  5. Add chopped yellow onion to the skillet and cook until softened, about 5 minutes.
  6. Add garlic and ginger and cook for 1 minute more until fragrant.
  7. Stir in curry powder, cumin, turmeric, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.
  8. Pour in coconut milk, chicken broth, soy sauce, and brown sugar. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  9. Return the browned meatballs to the skillet.
  10. Cover and simmer for 15-20 minutes, or until meatballs are cooked through and the sauce has thickened slightly.
  11. Garnish with fresh cilantro before serving.

Notes

  • For a spicier dish, add more cayenne pepper or a pinch of red pepper flakes.
  • Serve over rice or with naan bread for a complete meal.
  • You can make the meatballs ahead of time and store them in the refrigerator for up to 2 days.
