Make this flavorful taco soup entirely in one pot for easy weeknight cooking and minimal cleanup. It features classic taco seasoning and a bright finish of fresh lime.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef (or ground turkey/plant-based substitute)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet (1 ounce) taco seasoning mix
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon chili powder
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can Rotel (diced tomatoes and green chilies), undrained
  • 4 cups beef broth (or vegetable broth)
  • 1 cup frozen corn
  • Juice of 1 large lime
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the ground beef and cook, breaking it apart with a spoon, until browned. Drain off any excess grease.
  3. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  4. Stir in the minced garlic, taco seasoning, cumin, oregano, and chili powder. Cook for 1 minute until fragrant.
  5. Add the rinsed black beans, kidney beans, diced tomatoes, Rotel, beef broth, and frozen corn to the pot. Stir well to combine.
  6. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 15 minutes to allow the flavors to meld.
  7. Remove the pot from the heat. Stir in the fresh lime juice.
  8. Taste the soup and add salt and pepper as needed.
  9. Serve hot with your preferred toppings.

Notes

  • For a vegetarian version, substitute the ground beef with 1 cup of cooked lentils or an extra can of beans.
  • If you prefer shredded chicken taco soup, brown the meat, then add 2 cups of pre-cooked shredded chicken during the last 10 minutes of simmering.
  • Toppings suggestions include shredded cheese, sour cream or Greek yogurt, sliced avocado, chopped cilantro, and crushed tortilla chips.
  • This soup freezes well; cool completely before transferring to an airtight container.
