Ingredients

Scale
  • 2 medium zucchinis
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1 tablespoon water
  • For the Garlic Aioli:
  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and trim the ends of the zucchinis. Cut each zucchini into fry-like sticks, about 1/4 inch thick.
  3. In a shallow bowl, whisk together the eggs and water.
  4. In another shallow bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.
  5. Dip each zucchini stick into the egg mixture, letting any excess drip off.
  6. Dredge the egg-coated zucchini stick in the breadcrumb mixture, pressing gently to ensure it’s well coated.
  7. Place the coated zucchini fries in a single layer on the prepared baking sheet.
  8. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  9. While the fries are baking, prepare the aioli. In a small bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Stir until well combined.
  10. Serve the hot zucchini fries immediately with the garlic aioli for dipping.

Notes

  • For extra crispy fries, you can double-dip the zucchini sticks in the egg and breadcrumb mixture.
  • Feel free to adjust the seasonings in the breadcrumb mixture to your preference.
  • If you don’t have panko, regular breadcrumbs can be used, though the texture may be slightly different.
