This is a quick and refreshing Pea Shoot Cucumber Salad recipe. It combines crisp cucumber with tender pea shoots and a bright sesame ginger vinaigrette.

Ingredients

Scale
  • 4 cups fresh pea shoots
  • 2 medium cucumbers, thinly sliced
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon sesame oil
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon sugar
  • 1 clove garlic, minced
  • 1 tablespoon sesame seeds, toasted

Instructions

  1. Prepare the dressing: In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, grated ginger, sugar, and minced garlic until the sugar dissolves.
  2. Wash and gently dry the pea shoots. Place them in a large salad bowl.
  3. Add the thinly sliced cucumbers to the bowl with the pea shoots.
  4. Pour the dressing over the salad ingredients.
  5. Gently toss the salad until the pea shoots and cucumbers are lightly coated.
  6. Sprinkle the toasted sesame seeds over the top before serving.

Notes

  • If you cannot find pea shoots, you can substitute them with baby spinach or microgreens, though the texture will change.
  • For extra crunch, add 1/4 cup of chopped peanuts or slivered almonds.
  • If you prefer a tangier dressing, add a teaspoon of lime juice to the vinaigrette mixture.
