Prepare this make-ahead breakfast the night before for a creamy, fruit-flavored meal ready when you wake up. It features sweet peaches and a tart raspberry swirl.

Ingredients

Scale
  • 1/2 cup rolled oats
  • 1 tablespoon chia seeds
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup plain Greek yogurt or dairy-free alternative
  • 1 teaspoon maple syrup or honey (optional)
  • 1/4 teaspoon vanilla extract
  • 1/2 cup chopped fresh or thawed frozen peaches
  • 1/4 cup raspberries
  • 1 teaspoon lemon juice (for compote)

Instructions

  1. Prepare the raspberry swirl: In a small bowl, mash the raspberries with the lemon juice. If using frozen peaches, gently warm them slightly.
  2. In a jar or container, combine the rolled oats, chia seeds, milk, yogurt, maple syrup, and vanilla extract. Stir well until everything is mixed.
  3. Layer the mixture: Add half of the oat mixture to the bottom of the jar. Top with half of the chopped peaches. Add the remaining oat mixture, and top with the remaining peaches.
  4. Create the swirl: Spoon the raspberry mash over the top layer of oats and gently swirl it down into the mixture with a knife or spoon. Do not mix completely.
  5. Cover the container and refrigerate for at least 6 hours, or preferably overnight.
  6. In the morning, stir gently before eating. Add a splash more milk if the consistency is too thick for your liking.

Notes

  • For a dairy-free version, use almond, soy, or oat milk and a coconut or soy-based yogurt.
  • If you prefer a sweeter flavor, increase the maple syrup to 1.5 teaspoons.
  • Use frozen peaches and raspberries; they release more liquid, which works well in this recipe.
  • For added protein, mix in 1 scoop of vanilla protein powder with the dry ingredients.
