Ingredients
Scale
1 loaf challah or brioche bread, sliced
4 large eggs
2 cups heavy cream
1 cup milk
1/2 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
2 cups sliced fresh peaches
1/2 cup powdered sugar, for dusting (optional)
Maple syrup, for serving
Instructions
Slice the bread into 1-inch thick pieces.
In a large bowl, whisk together the eggs, heavy cream, milk, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.
Arrange half of the bread slices in a single layer in a 9×13 inch baking dish.
Scatter half of the sliced peaches over the bread.
Pour half of the egg mixture over the bread and peaches, ensuring all pieces are coated.
Repeat with the remaining bread slices, peaches, and egg mixture.
Cover the baking dish tightly with plastic wrap and refrigerate overnight, or for at least 8 hours.
Preheat your oven to 350°F (175°C).
Remove the plastic wrap and bake for 45-55 minutes, or until the French toast is golden brown and puffed up, and a knife inserted into the center comes out clean.
Let it cool slightly before serving. Dust with powdered sugar if desired, and serve warm with maple syrup.
Notes
For a cream cheese swirl, mix softened cream cheese with a little sugar and dollop it over the first layer of bread before adding the custard.
If you don’t have fresh peaches, you can use frozen or canned peaches, drained well.
Challah or brioche bread works best due to its rich, eggy texture, but French bread can also be used.
