Ingredients
Scale
1 sleeve graham crackers (about 9 full sheets)
1 cup (2 sticks) unsalted butter
1 cup packed light brown sugar
1/4 cup light corn syrup
1 teaspoon vanilla extract
1/4 teaspoon salt
1 1/2 cups pecan halves or pieces
1 cup semi-sweet chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
Arrange the graham crackers in a single layer on the prepared baking sheet, breaking them slightly if needed to fit snugly.
In a small saucepan, combine the butter, brown sugar, corn syrup, vanilla extract, and salt. Heat over medium heat, stirring constantly until the butter is melted and the mixture comes to a boil. Continue boiling for exactly one minute, stirring gently.
Remove the mixture from the heat and immediately pour the hot caramel mixture evenly over the graham crackers, spreading quickly to cover the surface.
Sprinkle the pecans evenly over the hot caramel layer.
Bake for 10 to 12 minutes, or until the caramel is bubbly and the pecans are lightly toasted. Watch carefully to prevent burning.
Remove the sheet from the oven. Immediately sprinkle the chocolate chips evenly over the hot pecan layer. Let it sit for 5 minutes to soften the chips.
Spread the melted chocolate gently with an offset spatula until you have an even layer.
Place the baking sheet in the refrigerator and chill for at least 1 hour, or until the bark is completely firm.
Once firm, break the Pecan Pie Bark into irregular pieces. Store in an airtight container.
Notes
You can substitute shortbread cookies for graham crackers if you prefer a richer base.
For a cleaner break, score the chocolate layer with a knife before chilling completely.
Use high-quality pecans for the best flavor in this simple pie flavors treat.
