Ingredients
Scale
1 cup graham cracker crumbs
1 cup chopped pecans, toasted
1/2 cup (1 stick) unsalted butter
1 cup packed light brown sugar
1/4 cup light corn syrup
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1 cup semi-sweet chocolate chips
Instructions
Line an 8×8 inch baking pan with parchment paper, letting the paper hang over the sides for easy removal.
In a medium saucepan, combine the butter, brown sugar, and corn syrup. Heat over medium heat, stirring constantly until the butter melts and the mixture comes to a boil.
Continue boiling for exactly 1 minute, stirring occasionally. Remove from heat immediately.
Stir in the vanilla extract and salt.
Pour the hot mixture over the graham cracker crumbs in a medium bowl. Mix quickly until the crumbs are coated.
Press the crumb mixture evenly into the prepared baking pan.
Sprinkle the toasted pecans evenly over the crumb layer.
Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
Drizzle or spread the melted chocolate over the pecans.
Refrigerate the bark for at least 2 hours, or until completely firm.
Lift the bark out of the pan using the parchment paper overhang. Break the bark into irregular pieces before serving or storing.
Notes
Toast the pecans lightly in a dry skillet over medium heat for 5 to 7 minutes until fragrant before using.
For a smoother chocolate layer, temper the chocolate chips or use melting wafers instead.
Store the finished bark in an airtight container at room temperature for up to one week, or in the refrigerator for longer storage.
