Ingredients
Scale
4 slices artisan bread
1 cup whole milk ricotta cheese
2 tablespoons heavy cream or milk
Pinch of salt
1 teaspoon lemon zest (optional)
For Sweet Topping: 2 tablespoons honey, 1/4 cup chopped walnuts or pecans
For Savory Topping: 1 teaspoon everything bagel seasoning
For Egg Topping: 2 large eggs, 1 teaspoon olive oil
Instructions
Prepare the whipped ricotta: Combine the ricotta cheese, heavy cream or milk, salt, and lemon zest (if using) in a food processor or a bowl. Process or whisk vigorously until the mixture is light, smooth, and airy.
Toast the bread: Toast the four slices of bread until golden brown and crisp.
Assemble the sweet version: Spread a generous layer of whipped ricotta onto two slices of toast. Drizzle with honey and sprinkle with chopped nuts.
Assemble the savory version: Spread a layer of whipped ricotta onto the third slice of toast. Sprinkle evenly with everything bagel seasoning.
Assemble the egg version: Heat olive oil in a small skillet over medium heat. Fry the two eggs to your preferred doneness (sunny-side up works well). Place one egg on the fourth slice of toast and top with a spoonful of plain whipped ricotta underneath or around the yolk.
Serve all three variations immediately.
Notes
For a smoother texture, press the ricotta through a fine-mesh sieve before whipping.
If you do not have a food processor, use a hand mixer or whisk vigorously for several minutes to achieve the whipped consistency.
Use high-quality, thick-cut bread for the best results.
