- 1 pound radishes, trimmed and halved or quartered if large
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh dill, chopped
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Place the trimmed radishes on a baking sheet.
- Drizzle the radishes with olive oil.
- Toss the radishes to coat them evenly with the oil.
- Spread the radishes in a single layer on the baking sheet.
- Roast for 15 minutes.
- Remove the pan from the oven and add the minced garlic, salt, and pepper. Toss the radishes gently on the pan.
- Return the pan to the oven and roast for another 10 to 15 minutes, or until the radishes are tender when pierced with a fork.
- Remove from the oven and immediately toss with the chopped fresh dill.
- Serve hot.
Notes
- Choose radishes that are firm and uniform in size for even cooking.
- If you prefer a stronger garlic flavor, you can add half the garlic before roasting and the other half after.
- You can substitute parsley for dill if you do not have fresh dill available.
