A simple recipe for a hearty, comforting pork stew cooked low and slow in a crockpot until the meat is fork-tender.

Ingredients

Scale
  • 2 lbs pork shoulder, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 carrots, peeled and thickly sliced
  • 3 celery stalks, thickly sliced
  • 4 medium potatoes, peeled and cubed
  • 4 cups low-sodium chicken or vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons cornstarch mixed with 3 tablespoons cold water (for slurry)

Instructions

  1. Pat the pork cubes dry and season lightly with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Brown the pork cubes in batches, about 2-3 minutes per side. Remove the browned pork and place it in the slow cooker.
  3. Add the chopped onion, carrots, and celery to the slow cooker.
  4. Pour the broth and diced tomatoes (with juice) over the pork and vegetables.
  5. Add the minced garlic, thyme, and rosemary. Stir gently to combine.
  6. Cover the slow cooker and cook on LOW for 7 to 8 hours or on HIGH for 3.5 to 4 hours, until the pork is very tender.
  7. About 30 minutes before serving, stir in the cubed potatoes. Continue cooking until the potatoes are soft.
  8. In a small bowl, whisk together the cornstarch and cold water to create a slurry. Stir the slurry into the stew.
  9. Cover and cook on HIGH for another 15-20 minutes, or until the stew has thickened to your liking.
  10. Taste and adjust salt and pepper before serving.

Notes

  • For deeper flavor, you can sear the vegetables in the skillet after browning the pork before adding them to the slow cooker.
  • If you prefer a thicker stew without using cornstarch, remove about 1 cup of the liquid and vegetables, mash them, and return the mixture to the pot.
  • Use pork butt or shoulder for the best tender results in slow cooking.
