Ingredients
Scale
1 lb ground beef (80/20 recommended)
1 tsp salt
1 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
12 small corn or flour tortillas
1 cup shredded lettuce
1/2 cup diced white onion
1/2 cup diced tomato
1/2 cup shredded cheddar or American cheese
Smash Burger Sauce (see notes)
Instructions
Divide the ground beef into 12 equal, loose balls. Do not pack them.
Mix salt, pepper, garlic powder, and onion powder in a small bowl for the seasoning blend.
Heat a large, flat griddle or cast-iron skillet over medium-high heat until very hot.
Place a beef ball on the hot surface. Immediately place a piece of parchment paper over the ball and use a sturdy, flat spatula or burger press to smash the patty very thin (about 1/4 inch thick). Press hard for 10 seconds to ensure good contact.
Remove the parchment paper and immediately sprinkle the seasoning blend over the patty.
Cook for 90 seconds without moving the patty to develop a crust.
Flip the patty. Immediately place a small slice of cheese on top of each patty. Cook for another 60 seconds until the cheese is melted.
Warm the tortillas on a separate dry skillet or directly over a low gas flame until pliable and slightly toasted.
Assemble the tacos: Place one or two cheeseburger patties in each warm tortilla. Top with shredded lettuce, diced onion, diced tomato, and a drizzle of Smash Burger Sauce. Serve immediately.
Notes
For the Smash Burger Sauce: Mix 1/2 cup mayonnaise, 2 tablespoons ketchup, 1 tablespoon yellow mustard, 1 teaspoon pickle relish, and 1/2 teaspoon smoked paprika.
To get the best crispy edges, your griddle must be very hot before you place the meat down.
If using corn tortillas, lightly brush them with oil and heat them until they are slightly crisp before filling.
