A simple, oven-baked frittata featuring smoked salmon and fresh dill, perfect for brunch or a light meal.

Ingredients

Scale
  • 8 large eggs
  • 1/4 cup milk or cream
  • 4 ounces smoked salmon, chopped
  • 1/4 cup fresh dill, chopped
  • 1/2 cup shredded Gruyère or Swiss cheese
  • 2 tablespoons butter
  • 1/4 cup chopped onion
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8-inch oven-safe skillet.
  2. Melt the butter in the skillet over medium heat. Add the chopped onion and cook until soft, about 3 minutes.
  3. In a bowl, whisk the eggs and milk or cream together until well combined. Season with salt and pepper.
  4. Stir the chopped smoked salmon, fresh dill, and cheese into the egg mixture.
  5. Pour the egg mixture over the onions in the skillet.
  6. Cook on the stovetop for 2 to 3 minutes until the edges begin to set.
  7. Transfer the skillet to the preheated oven. Bake for 18 to 22 minutes, or until the center is set and a knife inserted near the center comes out clean.
  8. Let the frittata cool in the skillet for 5 minutes before slicing and serving.

Notes

  • For a fluffier texture, do not over-whisk the eggs; mix just until the yolks and whites combine.
  • You can substitute spinach for the onions or add capers for extra flavor.
  • This frittata works well served warm or at room temperature.
