Ingredients
Scale
1/2 cup (1 stick) unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1 cup semi-sweet chocolate chips
1 cup marshmallow creme or mini marshmallows
1/2 cup graham cracker crumbs
Instructions
Preheat your oven to 350°F (175°C). Grease a 9-inch cast-iron skillet.
In a medium bowl, whisk together the melted butter and granulated sugar.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate small bowl, whisk together the cocoa powder, flour, salt, and baking powder.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Fold in the chocolate chips.
Pour the batter into the prepared skillet and spread evenly.
Bake for 20-25 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached.
Remove the skillet from the oven. Immediately spread the marshmallow creme or sprinkle the mini marshmallows evenly over the top.
Sprinkle the graham cracker crumbs over the marshmallows.
Return the skillet to the oven for another 3-5 minutes, or until the marshmallows are golden brown and gooey.
Let cool slightly before serving directly from the skillet.
Notes
For an extra gooey center, reduce the baking time slightly.
You can toast the marshmallows under the broiler for a quicker browning, but watch them carefully to prevent burning.
Serve warm with a scoop of vanilla ice cream for an extra decadent treat.
