Ingredients
Scale
1 pound fresh snap peas, trimmed
1/2 cup slivered almonds, toasted
1/4 cup rice vinegar
3 tablespoons soy sauce or tamari
2 tablespoons toasted sesame oil
1 tablespoon fresh ginger, grated
1 teaspoon granulated sugar
1 clove garlic, minced
1/4 cup vegetable oil
Instructions
Prepare the dressing: In a small bowl, whisk together the rice vinegar, soy sauce, toasted sesame oil, grated ginger, sugar, and minced garlic. Slowly whisk in the vegetable oil until the dressing emulsifies slightly.
Place the trimmed snap peas in a large bowl.
Pour half of the dressing over the snap peas and toss gently to coat. Let the peas marinate for 10 minutes.
Add the toasted slivered almonds to the bowl. Toss again.
Serve immediately with the remaining dressing on the side, or store chilled for up to 4 hours.
Notes
Toast the almonds in a dry skillet over medium heat for 3 to 5 minutes, shaking often until fragrant and lightly browned.
For a complete meal, add 1 cup of shredded cooked chicken or cubed baked tofu.
If you prefer a sweeter dressing, increase the sugar to 1 1/2 teaspoons.
