Make a refreshing, tart, and sweet sparkling beverage by preparing a homemade strawberry shrub syrup and mixing it with soda water.

Ingredients

Scale
  • 1 pound fresh or frozen strawberries, hulled and halved
  • 1 cup granulated sugar
  • 1 cup apple cider vinegar
  • 1 cup cold sparkling water or club soda (per serving)
  • Ice cubes

Instructions

  1. Combine the strawberries and sugar in a non-reactive bowl. Stir them together gently.
  2. Cover the bowl and let the mixture sit at room temperature for 4 to 6 hours, stirring occasionally, until the sugar has drawn out a significant amount of liquid from the strawberries.
  3. Transfer the strawberry and sugar mixture to a saucepan. Add the apple cider vinegar.
  4. Bring the mixture to a gentle simmer over medium heat, stirring until the sugar is completely dissolved. Do not boil vigorously.
  5. Remove the saucepan from the heat. Let the mixture steep for 30 minutes to allow the flavors to meld.
  6. Strain the syrup through a fine-mesh sieve into a clean jar, pressing gently on the solids to extract all the liquid. Discard the solids.
  7. Allow the strawberry shrub syrup to cool completely. Store it in an airtight container in the refrigerator.
  8. To serve, fill a glass with ice. Add 2 to 3 tablespoons of the strawberry shrub syrup.
  9. Top the glass with cold sparkling water or club soda. Stir gently. Adjust the amount of shrub to match your preferred tartness level.

Notes

  • For a deeper flavor, you can substitute 1/4 cup of the apple cider vinegar with balsamic vinegar.
  • If using frozen strawberries, you may need to let the initial sugar maceration sit for up to 8 hours.
  • If you prefer a less tart drink, reduce the vinegar to 3/4 cup and increase the sugar to 1 1/4 cups.
