Ingredients
Scale
1 cup spring onions, white and green parts, thinly sliced
1/4 cup apple cider vinegar
2 tablespoons brown sugar
1 tablespoon water
1/4 teaspoon salt
Pinch of black pepper
4 slices artisan bread
4 ounces Gruyère cheese, shredded
2 tablespoons unsalted butter, softened
1/2 teaspoon fresh thyme leaves
Instructions
To make the jam: Combine spring onions, vinegar, brown sugar, water, salt, and pepper in a small saucepan.
Bring the mixture to a simmer over medium heat. Reduce heat to low and cook, stirring occasionally, for 25 to 30 minutes, until the liquid has reduced and the onions are soft and jam-like. Remove from heat and set aside to cool slightly.
To make the thyme butter: In a small bowl, mix the softened butter with the fresh thyme leaves.
Spread the thyme butter evenly on one side of each slice of bread.
Assemble the sandwich: Place two slices of bread, butter-side down, in a non-stick skillet over medium-low heat.
Top each slice with half of the Gruyère cheese, followed by a generous layer of the cooled spring onion jam.
Place the remaining bread slices on top, butter-side up.
Grill for 3 to 4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is fully melted.
Remove from the skillet, slice in half, and serve immediately.
Notes
For a sweeter jam, increase the brown sugar by one teaspoon.
If you do not have Gruyère, Swiss cheese or sharp white cheddar work well as substitutes.
Use low heat to cook the sandwich; this allows the cheese to melt completely before the bread burns.
