- 4 cups water
- 4 green tea bags (or 2 tablespoons loose leaf green tea)
- 1 cup fresh strawberries, hulled and sliced
- 1/4 cup fresh mint leaves, lightly crushed
- 1/4 cup simple syrup (adjust to taste)
- Ice cubes
- Heat 2 cups of water until just before boiling (about 175°F or 80°C). Do not use boiling water for green tea.
- Place the green tea bags or loose leaf tea in a heatproof container. Pour the hot water over the tea.
- Steep the tea for 3 minutes. Remove the tea bags or strain the leaves.
- While the tea is still warm, add the sliced strawberries and crushed mint leaves to the brewed tea.
- Let the mixture steep for 15 minutes to infuse the flavors.
- Strain the tea mixture into a pitcher, pressing gently on the strawberries and mint to extract liquid. Discard the solids.
- Stir in the simple syrup until dissolved.
- Add the remaining 2 cups of cold water to the pitcher.
- Chill the tea in the refrigerator for at least 1 hour.
- Serve the tea over ice, garnishing each glass with a fresh strawberry slice and a mint sprig.
Notes
- For a less sweet drink, reduce the simple syrup or substitute with 2 tablespoons of honey.
- If you prefer a stronger strawberry flavor, muddle half of the strawberries before adding them to the warm tea.
- You can substitute frozen strawberries, but allow them to thaw slightly before adding them to the warm tea.
