Make this simple, refreshing, non-alcoholic drink for brunch or any celebration. It uses fresh strawberries and sparkling juice for a bubbly, festive flavor.

Ingredients

Scale
  • 1 cup fresh strawberries, hulled
  • 2 tablespoons fresh lime juice
  • 1 tablespoon simple syrup (or to taste)
  • 1 cup chilled sparkling white grape juice or sparkling white cranberry juice
  • 1/2 cup chilled club soda or sparkling water
  • Garnish: Strawberry slices and lime wheels

Instructions

  1. Puree the hulled strawberries in a blender until completely smooth.
  2. Strain the puree through a fine-mesh sieve into a bowl to remove seeds, pressing down on the solids. Discard the solids.
  3. In a small bowl, mix 1/4 cup of the strained strawberry puree with the lime juice and simple syrup. This is your base concentrate.
  4. Divide the base concentrate evenly between two chilled champagne flutes or coupe glasses.
  5. Top each glass with half of the sparkling white grape juice.
  6. Gently add half of the club soda to each glass to increase fizziness. Stir very gently once.
  7. Garnish each glass with a strawberry slice and a lime wheel before serving immediately.

Notes

  • For a sweeter drink, increase the simple syrup slightly.
  • Chill all liquids before mixing for the best flavor and carbonation.
  • You can make the strawberry puree up to one day ahead and store it covered in the refrigerator.
