Ingredients
Scale
12 large banana peppers
8 oz cream cheese, softened
4 oz shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1/4 teaspoon black pepper
1 tablespoon fresh parsley, chopped
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking dish.
Slice the banana peppers lengthwise and carefully remove the seeds and membranes using a small spoon. Keep the pepper halves intact.
In a medium bowl, combine the softened cream cheese, mozzarella cheese, Parmesan cheese, minced garlic, black pepper, and chopped parsley. Mix until the filling is smooth and well combined.
Spoon or pipe the cheese mixture evenly into the hollowed-out banana pepper halves. Do not overfill.
Place the stuffed peppers seam-side up in the prepared baking dish.
Bake for 20 to 25 minutes, or until the peppers are tender and the cheese filling is melted and lightly golden on top.
Remove from the oven and let cool slightly before serving.
Notes
For a low carb option, skip any breadcrumb additions often found in other recipes.
If you prefer a slightly spicier flavor, mix 1/4 teaspoon of red pepper flakes into the cheese filling.
You can prepare the stuffed peppers up to 24 hours ahead and keep them covered in the refrigerator before baking.
