Ingredients
Scale
1 pound white or cremini mushrooms, stems removed
1 tablespoon olive oil
1/2 pound bulk Italian sausage, casings removed
4 ounces cream cheese, softened
1/2 cup shredded Parmesan cheese
2 cloves garlic, minced
1/4 cup finely chopped mushroom stems
2 tablespoons fresh parsley, chopped
1/4 teaspoon black pepper
1/4 cup breadcrumbs (optional, for topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking sheet.
Wipe the mushroom caps clean. Gently remove the stems and set the caps aside. Finely chop the removed stems.
Heat the olive oil in a skillet over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
In a medium bowl, combine the cooked sausage, softened cream cheese, Parmesan cheese, minced garlic, chopped mushroom stems, parsley, and black pepper. Mix until the filling is uniform.
Spoon the filling mixture evenly into the mushroom caps, mounding it slightly.
Place the filled mushrooms on the prepared baking sheet. If desired, sprinkle the tops lightly with breadcrumbs.
Bake for 20 to 25 minutes, or until the mushrooms are tender and the filling is golden brown and bubbly.
Let cool for a few minutes before serving.
Notes
You can prepare the filling up to one day ahead and store it covered in the refrigerator. Fill the mushrooms just before baking.
For a different flavor, substitute the Italian sausage with cooked bacon bits or finely chopped cooked ham.
If you prefer a milder flavor, use sweet Italian sausage instead of hot.
