This sugar-free banana bread recipe delivers a wonderfully moist crumb using only the natural sweetness of very ripe bananas. It is a guilt-free treat perfect for breakfast or a wholesome snack.

Ingredients

Scale
  • 3 large very ripe bananas, mashed well (about 1 1/2 cups)
  • 1/2 cup unsweetened applesauce
  • 1/3 cup melted coconut oil or unsalted butter
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour (or substitute with a 1:1 gluten-free blend)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Optional: 1/4 cup chopped walnuts or pecans
  • Optional: 1/4 cup zero-calorie sweetener (like monk fruit blend) if bananas are not extremely ripe

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan, or line it with parchment paper.
  2. In a large bowl, combine the mashed bananas, applesauce, melted oil or butter, eggs, and vanilla extract. Mix until just combined.
  3. In a separate medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. If using the optional zero-calorie sweetener, add it here.
  4. Gradually add the dry ingredients to the wet ingredients. Mix with a spatula until you just combine them. Do not overmix; a few streaks of flour are fine.
  5. If using, gently fold in the chopped nuts.
  6. Pour the batter into your prepared loaf pan and spread it evenly.
  7. Bake for 50 to 65 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs attached.
  8. Let the bread cool in the pan for 10 minutes before carefully removing it to a wire rack to cool completely before slicing.

Notes

  • The riper your bananas are (the more black spots they have), the sweeter your bread will be, reducing the need for any added sweetener.
  • For a low-carb banana bread option, substitute the all-purpose flour with almond flour, adjusting the wet ingredients slightly if the batter seems too thick.
  • This recipe makes a tender banana bread that is excellent for diabetic friendly dessert planning.
