Ingredients
Scale
2 medium zucchini, grated
1 cup fresh or frozen sweet corn kernels
1/2 cup all-purpose flour
1 large egg, lightly beaten
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh cilantro
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Vegetable oil, for frying
For the Crema: 1/2 cup sour cream, 1 tablespoon lime juice, 1 tablespoon chopped cilantro, 1/2 teaspoon hot sauce
Instructions
Grate the zucchini and place it in a clean kitchen towel or several layers of paper towels. Squeeze out as much liquid as possible. This step is important for crispy fritters.
In a medium bowl, combine the drained zucchini, corn kernels, flour, beaten egg, Parmesan cheese, cilantro, baking powder, salt, and pepper. Mix until just combined. Do not overmix.
Heat about 1/4 inch of vegetable oil in a large skillet over medium heat until the oil shimmers (about 350°F).
Drop rounded tablespoons of the batter into the hot oil, flattening them slightly with the back of the spoon to form patties. Work in batches to avoid overcrowding the pan.
Fry for 3 to 4 minutes per side, until golden brown and cooked through.
Remove the fritters from the oil and place them on a wire rack or a plate lined with paper towels to drain excess oil.
While the fritters cook, prepare the crema: Whisk together the sour cream, lime juice, cilantro, and hot sauce in a small bowl.
Serve the warm fritters immediately with the spicy cilantro lime crema.
Notes
For extra crispy fritters, ensure you press out all the moisture from the grated zucchini.
If you prefer an air fryer method, lightly spray the formed patties with oil and cook at 375°F for 10 to 12 minutes, flipping halfway.
You can substitute all-purpose flour with a gluten-free blend to make these gluten-free.
