Transform summer zucchini into a fun, lighter take on tacos. These hollowed zucchini boats are filled with spiced taco meat, cheese, and your favorite toppings, offering the taco flavor you crave with fewer carbs and using seasonal produce.

Ingredients

Scale
  • 2 medium zucchini
  • 1 pound ground beef or turkey
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1/2 cup shredded cheddar cheese
  • Optional toppings: chopped tomatoes, shredded lettuce, salsa, sour cream, avocado

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchini in half lengthwise. Scoop out the seeds and some of the flesh to create a boat shape, leaving about a 1/4-inch border.
  3. Heat olive oil in a skillet over medium heat. Add the ground meat and cook until browned, breaking it up with a spoon. Drain off any excess fat.
  4. Add the chopped onion and cook until softened, about 5 minutes.
  5. Stir in the minced garlic and taco seasoning. Add the water and bring to a simmer. Cook for 5-7 minutes, or until the sauce has thickened.
  6. Place the zucchini halves on a baking sheet.
  7. Spoon the taco meat mixture evenly into the zucchini boats.
  8. Top with shredded cheddar cheese.
  9. Bake for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
  10. Serve hot with your favorite toppings.

Notes

  • For a vegetarian option, use plant-based ground meat or seasoned black beans.
  • Adjust the taco seasoning to your spice preference.
  • If you don’t have taco seasoning, you can make your own with chili powder, cumin, paprika, garlic powder, and onion powder.
