Make this fresh and simple Mediterranean salad featuring tomatoes, cucumbers, and feta cheese with a bright lemon herb dressing. It is a quick, no-cook side dish perfect for summer meals.

Ingredients

Scale
  • 2 large ripe tomatoes, cut into wedges
  • 1 large cucumber, peeled and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced (optional)
  • 1/4 cup Kalamata olives, pitted (optional)
  • 2 tablespoons fresh parsley, chopped
  • For the Vinaigrette:
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the vegetables: Cut the tomatoes into wedges and slice the cucumber. Place them in a large bowl.
  2. Add the optional ingredients: Add the sliced red onion and Kalamata olives to the bowl with the vegetables.
  3. Make the dressing: In a small jar, combine the olive oil, lemon juice, dried oregano, salt, and pepper. Close the jar tightly and shake well until the dressing emulsifies.
  4. Dress the salad: Pour the vinaigrette over the vegetables and toss gently to coat everything evenly.
  5. Add the feta: Sprinkle the crumbled feta cheese and chopped parsley over the salad. Toss lightly one final time.
  6. Serve immediately or chill for 15 minutes before serving for better flavor melding.

Notes

  • For a stronger flavor, let the salad marinate in the refrigerator for 30 minutes before serving.
  • If you prefer a tangier dressing, increase the lemon juice by one teaspoon.
  • Mint can replace parsley for a different fresh herb flavor.
