Ingredients
Scale
1 cup unsalted butter, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1 cup soft caramel candies (unwrapped)
2 tablespoons heavy cream
1 cup milk chocolate chips
1 tablespoon coconut oil
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
Beat the softened butter, sugar, and vanilla extract in a large bowl until light and fluffy for the shortbread base.
Gradually add the flour and salt. Mix until just combined to form a stiff dough.
Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets. Press each ball down slightly with the bottom of a glass to form a thick disc.
Bake for 10 to 12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.
Prepare the caramel filling: Place the soft caramel candies and heavy cream in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each, until the mixture is smooth and melted.
Once the cookies are cool, spoon about 1 teaspoon of the warm caramel mixture onto the center of each cookie. Spread it slightly, leaving a small border. Let the caramel set for 15 minutes.
Prepare the chocolate topping: Combine the milk chocolate chips and coconut oil in a microwave-safe bowl. Microwave until smooth, stirring every 30 seconds.
Drizzle or dip the tops of the caramel-covered cookies with the melted chocolate.
Allow the chocolate to set completely before serving or storing.
Notes
For a cleaner drizzle, use a fork to flick the melted chocolate over the cookies.
If you prefer a thicker shortbread base, press the dough into a 9×13 inch pan and bake as bars, cutting them after the chocolate sets.
Use high-quality caramel candies for the best gooey texture.
