Ingredients
Scale
1 small seedless watermelon
1/4 cup granulated sugar (optional, for added sweetness)
1 tablespoon lemon juice
Instructions
Cut the watermelon into 1-inch thick slices.
Remove the rind and any seeds.
Cut the watermelon slices into strips, about 1/2 inch wide and 4-6 inches long.
If using, toss the watermelon strips with granulated sugar and lemon juice in a bowl.
Arrange the watermelon strips in a single layer on dehydrator trays, ensuring they do not touch.
Dehydrate at 135°F (57°C) for 8-12 hours, or until the strips are leathery and chewy.
Allow the watermelon jerky to cool completely before storing.
Notes
The sugar is optional. Watermelon is naturally sweet, but a little sugar can enhance the candy-like texture and flavor.
Drying time will vary depending on your dehydrator and the thickness of the watermelon strips.
Store the watermelon jerky in an airtight container at room temperature for up to two weeks.
