Make easy, low-carb pizza bites using zucchini slices as the base. This recipe includes instructions for a crispy oven bake and an air fryer option.

Ingredients

Scale
  • 3 medium zucchini
  • 1 large egg, lightly beaten
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/2 cup low-sugar pizza sauce
  • 1/2 cup shredded mozzarella cheese
  • Your favorite low-carb pizza toppings (e.g., pepperoni, chopped bell peppers)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Slice the zucchini into rounds about 1/2 inch thick.
  3. Place the zucchini slices between layers of paper towels or a clean kitchen towel. Press firmly to remove as much moisture as possible. This step is key for crispiness.
  4. In a shallow bowl, whisk together the egg, Parmesan cheese, almond flour, oregano, garlic powder, salt, and pepper.
  5. Dip each zucchini slice into the egg mixture, coating both sides lightly.
  6. Place the coated slices on the prepared baking sheet.
  7. Bake for 12 minutes until they start to firm up.
  8. Remove from the oven. Top each slice with a small amount of pizza sauce, mozzarella cheese, and your chosen toppings.
  9. Return to the oven and bake for another 5 to 8 minutes, or until the cheese is melted and bubbly.
  10. For Air Fryer Method: Follow steps 1 through 4. Place coated zucchini in the air fryer basket in a single layer (work in batches). Air fry at 375°F (190°C) for 6 minutes. Top with sauce and cheese, then air fry for 2 to 3 more minutes until done.

Notes

  • Squeezing the water out of the zucchini prevents soggy bites. Press hard.
  • For a crispier crust in the oven, you can lightly spray the tops of the zucchini with cooking spray before adding toppings.
  • Use low-carb or keto-friendly toppings to keep the snack low in carbohydrates.
