Make these simple, no-bake avalanche cookies using white chocolate, peanut butter, marshmallows, and cereal for a quick, crunchy treat perfect for gifting or holidays.

Ingredients

Scale
  • 12 ounces white chocolate chips
  • 1 cup creamy peanut butter
  • 6 cups crispy rice cereal
  • 2 cups mini marshmallows

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a large microwave-safe bowl, combine the white chocolate chips and peanut butter.
  3. Microwave in 30-second intervals, stirring well after each interval, until the mixture is completely smooth and melted. This usually takes 1 to 1.5 minutes total.
  4. Quickly fold in the crispy rice cereal and mini marshmallows until everything is evenly coated with the chocolate mixture. Work fast before the chocolate sets.
  5. Drop rounded tablespoons of the mixture onto the prepared baking sheet.
  6. Allow the cookies to set completely at room temperature or chill in the refrigerator for about 20 minutes until firm.

Notes

  • For a cleaner look, you can press the mixture into a 9×13 inch pan and cut it into squares once set.
  • If you prefer a slightly less sweet cookie, you can substitute half of the white chocolate chips with milk chocolate chips.
  • Store finished cookies in an airtight container at room temperature for up to one week.
