Make this easy, cheesy chicken and black bean burrito bake for a simple weeknight dinner. This one-pan casserole uses layered tortillas, seasoned chicken, and beans baked until bubbly.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground chicken or shredded cooked chicken
  • 1 medium onion, chopped
  • 1 packet (1 ounce) taco seasoning mix
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup salsa, medium heat
  • 1 cup cooked white rice
  • 10 medium flour tortillas, cut into quarters
  • 2 cups shredded Mexican cheese blend
  • 1 cup sour cream or plain Greek yogurt (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes.
  3. Add ground chicken (if using) to the skillet. Cook until browned, breaking it up as it cooks. If using pre-cooked chicken, skip cooking and proceed.
  4. Stir in taco seasoning, black beans, salsa, and cooked rice. Cook for 5 minutes, stirring occasionally, until heated through.
  5. Spread a thin layer of the chicken mixture on the bottom of the prepared baking dish.
  6. Arrange one-third of the cut tortillas over the chicken mixture.
  7. Spoon half of the remaining chicken mixture over the tortillas. Sprinkle with one-third of the cheese.
  8. Repeat the layering: tortillas, remaining chicken mixture, and another third of the cheese.
  9. Top with the final layer of tortillas and the remaining cheese.
  10. Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the edges are lightly browned.
  11. Let the casserole rest for 5 minutes before serving. Top each serving with a dollop of sour cream or Greek yogurt.

Notes

  • You can prepare the entire casserole, cover it, and refrigerate it up to 24 hours before baking. Add 10 minutes to the baking time if cooking straight from the refrigerator.
  • Use ground beef or shredded pork instead of chicken for a variation.
  • For a lower-fat option, use reduced-fat cheese and plain Greek yogurt instead of sour cream.
