Ingredients
Scale
4 boneless, skinless chicken breasts, pounded to 1/2 inch thickness
1 cup all-purpose flour
2 large eggs, beaten
1 1/2 cups panko breadcrumbs
1/2 cup grated Parmesan cheese, plus more for topping
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil, divided
1 cup marinara sauce
1 cup shredded mozzarella cheese
Instructions
Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
Set up a standard breading station with three shallow dishes. Place flour in the first dish. Whisk eggs in the second dish. In the third dish, combine panko breadcrumbs, 1/2 cup Parmesan cheese, oregano, garlic powder, salt, and pepper.
Dredge each pounded chicken cutlet first in the flour, shaking off excess. Dip it into the egg mixture, allowing excess to drip off. Finally, press the cutlet firmly into the breadcrumb mixture to coat both sides completely.
Lightly spray both sides of the breaded cutlets with cooking spray or brush with 1/2 teaspoon of olive oil per cutlet. This helps achieve crispiness in the oven.
Place the coated chicken on the prepared baking sheet. Bake for 15 minutes.
Remove the chicken from the oven. Spoon about 2 tablespoons of marinara sauce over the top of each cutlet. Sprinkle generously with mozzarella cheese and a little extra grated Parmesan.
Return the chicken to the oven and bake for another 5 to 8 minutes, or until the cheese is melted, bubbly, and the chicken is cooked through (internal temperature reaches 165°F or 74°C).
Serve immediately over your favorite pasta with extra sauce, or alongside garlic bread.
Notes
For extra crispiness, you can lightly toast the panko breadcrumbs in a dry skillet for 3 minutes before mixing them with the seasonings.
Use high-quality marinara sauce for the best flavor.
If you prefer a juicier cutlet, ensure you pound the chicken evenly to about 1/2 inch thickness.
