Make tender, flavorful chicken satay skewers quickly at home. This recipe includes a simple marinade and a rich, creamy Thai peanut sauce perfect for a weeknight dinner or appetizer.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch strips
  • 1/4 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon vegetable oil
  • Wooden skewers (soaked in water for 30 minutes)
  • For the Peanut Sauce:
  • 1/2 cup creamy peanut butter
  • 1/4 cup hot water
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Combine coconut milk, soy sauce, brown sugar, turmeric, coriander, cumin, cayenne pepper, and vegetable oil in a bowl. Add the chicken strips and toss to coat completely. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  2. While the chicken marinates, prepare the peanut sauce. In a small saucepan over medium heat, combine peanut butter, hot water, soy sauce, lime juice, brown sugar, ginger, garlic, and red pepper flakes if using.
  3. Whisk the sauce mixture constantly until smooth and heated through. If the sauce is too thick, add water, one teaspoon at a time, until you reach a creamy, dippable consistency. Remove from heat and set aside.
  4. Thread the marinated chicken pieces onto the soaked wooden skewers, leaving a small space between each piece.
  5. Preheat your grill or broiler to medium-high heat. Lightly oil the grates or place skewers on a foil-lined baking sheet for broiling.
  6. Grill or broil the skewers for 3 to 4 minutes per side, turning occasionally, until the chicken is cooked through and lightly charred (internal temperature reaches 165°F).
  7. Serve the grilled chicken satay skewers immediately with the warm peanut sauce for dipping.

Notes

  • Soak wooden skewers for at least 30 minutes to prevent them from burning on the grill.
  • For juicier chicken, use chicken thighs instead of breasts.
  • You can make the peanut sauce ahead of time and store it in the refrigerator for up to 3 days; reheat gently before serving.
